I started a Sociedad and finished 5th in my first season, 2 points of a CL spot. I crashed out of the CL to Arsenal in the playoff and out of the Europa League to St Etienne in the first knockout round. Also in my first season I beat Atletico at home, 0-0 draw away against Real Madrid and a 3-1 at home against Barca.
Second season was a mix bag, signed Bacca and Iborra from relegated Sevilla and also Naves from Levante. Griezmann left for PSG. Struggling in the EL and 10th in the league I decided to head to the English leagues and bring Bolton back up from League 1.

Nope, downloading it now, hoping that'll prevent trouble in my next game...
Talking about that next game which team should I choose? I'm in no mood to rebuild Heerenveen again, and in fact I'm done with the Eredivisie... Something in Sweden or Austria could be cool I guess?

I'd recommend starting in a second division of a (relatively) big league. Always have some fun with that stuff. Having an Emmen and a Bochum career running atm.

Just started third season with Glasgow Rangers with big hopes for fighting with Celtic. New chairman gives ~20mln euros and extend stadium. Also I have won Scottish Cup last season but I can't play in european cups till 2016 :< |

Done quite a few seasons with Heerenveen now with the results being:
2013/2014 sc Heerenveen 3rd in the league
2014/2015 sc Heerenveen 4th
2015/2016 sc Heerenveen 2nd, winner Dutch Cup
2016/2017 sc Heerenveen 1st, winners Super Cup
2016 Netherlands 3rd on the Olympics
2017/2018 sc Heerenveen 2nd
2018/2019 sc Heerenveen 1st, winners Super Cup
2019/2020 sc Heerenveen 1st
2020/2021 sc Heerenveen 1st, winners Super Cup
2021 Belgium Qualified for the World Cup in Qatar

Slight update (without even knowing if anyone bothers to read anything of this)
I finished the 2021/2022 season in a great way, recovering from 5th to 2nd and winning the Dutch Cup, mainly thnaks to my Christmas-buy: Michy Batshuayi. He played 8 matches for me, scored 8 goals. (He was injured for a while as well). Him being Belgian, I decided to take him to the WC as well, where he scored 3 goals, 2 in the groupfase, 1 later on.
Groupfase was average, 1-1 to South Korea, winning 4-0 to Uruguay and losing 1-0 to Portugal meant we were 2nd, facing Colombia in the next round. Michy scored the only goal there, meaning we advanced, which wasn't expected really.
England was next, and kept us at a 1-1, so penalties were needed, we won it 5-4.
Then, semi final againt Turkey, and we lost? Somehow Turkey was better and won 2-0.
3rd Place match: Again versus Portugal, however Lukaku was on fire here, making sure we won 2-0.
So a good WC for us
Just started the next season with a loss on penalties against Feyenoord for the Super Cup and a 5-0 win against Besiktas in the Champions League Qualifiers. 2 of those goals were own goals

I actually have got this game but never got a career started because it looks really hard to use. Is it worth looking at a few guides or 'how-to's first before I start playing?

You could.
But if you have some knowledge about football you could also just jump in. Tactics are never guaranteed to work and need a lot of tweaking to your players' abilities.
I started my game with 2 fast wingers and 1 striker who was really bad on the ball, meaning I had to use my wingers as much as possible. Now I still use the same formation, but with 2 technically strong wingers and a very all-round striker meaning I can attack through the middle more often than I used to, which I adjusted my tactic for...
The game may be a bit overwhelming at first, but it's just trial and error, even when you're 20 seasons in.

Thanks. I know a bit about football but things like some of the roles (trequarista, false nine, number 10?) and tactics all seemed unfamiliar. I also got the feeling that there was always something I would always be forgetting, but I guess that after playing for a while it gets a bit easier to do. I might read a guide but also will try just working it out for myself too

Try out the "Classic" mode. It streamlines a lot of the game by cutting out a lot of the depth and busy work. Even in the full manager mode you can get tons of tool-tips and pop-ups guiding you through and explaining things.
It's one of the best things that FM does, explaining the mechanics and details to the player.
