I made a 10 km Mountain Team Time Trial but im not really sure what stats are use for such a stage; Prologe, TT, Hill or Mountain??? Can someone help me?
It's a combination.
If there is a climb of 5km long, 10%, there is for example 65% usage of the MO stat, and 35% of the hill stats. It's almost never only hill or only mountain. It doesn't really have to do thát much with the % of the slopes btw.
And @ your first question:
MTT's have more to do with MO than with TT/PRL I experienced...
The stats are related to the length of the climb rather than the percentage.
The hill stat is for short climbs like in Amstel Gold Race, while mountain is for longer climbs (real mountains).

It sort of depends on the stage. Yeah I'd say a plain could maybe go from 0-2.5% Though to distinguish between a hill and a mountain not only depends on the steepness of the climb, but also the duration.
For example, Philippe Gilbert, Hill 84, Mountain 74 I think, does fantastic in the ardennes classics, but would crack fairly quickly up the Tourmalet.
So it really depends, if you're still talking about this time-trial, the chances are that an rider with a good Mountain and Time-trial stats would also have good Hill stats.
I did a Stage 100 km long with a max local slope from 2,8% and an average slope from 2,5%, so it will only use Montain stat all the way??? In the Stage viewer is categoriced as Mountain stage and has a max local slope: 2,8, uphill sprint 0,0, gene_f_mountain altitude 1,00.

The stat used doesn't directly have to do with neither the slope or length of the climb, but instead with the HIL/MO value of the stage. As fickman said in the last post, it's 1 in this stage so yes, only mountain will be used when climbing, regardless whether it's a 1km-3% climb, 1km-20% climb, or a 20km-8% climb. Of course the length and steepness of the climbs are decisive for the game's calculation of the HIL/MO value, but once that's set, all climbs are the same.
But to your stage specifically. I think the climbing stat (in this case solely MO) will have less effect than what you might be thinking of. Iirc, I read that the Flat stat is the main one used for effort/speed calculation when the slope is between -3% ~ 3% (tried to search but couldn't find it). However I don't know if the same applies for TTs, especially when the TT is classified by the game as a mountain one. But it shouldn't be hard to test and see who's suffering more and who's doing better.
