Hi there, hoping someone can help me, I've downloaded the additional stagepacks, now i'm just stuck on what screen you actually pick these on.

It's on the stage race and the stage screen. That means, if you enter the game. Single player -> either Stage race, or stage. (there are also new stages at 'classic' but, less than the stage races)
Then, if you installed everything correctly, you should select for example tour de france, and you see right-above the screen <- 2012 -> Now if you click on one of the arrows, you can play the additional stages.You can't play the additional stages in career the first season, if I'm right it will automatically appear in your second season as a normal race.
If you mean downloaded stages, just go to stage race, stage or classic mode and at the top right there is an option to select different variants with the arrows

Yeah, I think so. If you added the variants for example in February 2016, then you can start playing them in your career in 2017.
And yes, it's random.
There is a way to control which variant will appear when I believe, but you have to wait for an answer of a more experienced member for that I guess

To do that you must name the stage for example top_tdf_V1_06 to top_tdf_V1_06_2017 to play it in 2017, adding 2017 at the end

I think the world champs are the only race where you can't assign variants too Cyanide made 3 different stages for the WC, and they keep repeating themselves, without one of your stages...

No, there are 3 different world champs stages, and they are all hilly. Although I think you can indeed replace them with a different stage, just by renaming it as the WC stage...

Not necessarily if he only downloaded Cyanide's stage pack. First, there are two types of suffixes for the variants: years, which will make sure that the variant will be used in that year, or any other word, in which case the variant will be picked randomly in a year that hasn't got a fixed year variant. Since he downloaded the stage pack, which only has 1 TdF variant, he'll have two variants by now: the 2012 Tour de France and the v1 Tour de France. Since the variants system also guarantee that the same variant won't be repeated in 2 consecutive years (unless in a rare condition which does not apply here), if in 2016 he's playing the 2012 TdF variant, in 2017 he'll play the v1 variant, in 2018 the 2012 TdF variant and so on.

Definitely not, all races can have variants The stage pack itself includes 9 variants for the World Championships, so you'll have plenty of routes that will appear in the next years of your career
And to answer the question, yes, if you want the variants to be applied in a career, just install the Stage Pack and from the next year on they'll automatically appear. Notice that you can add variants any time in a career, so it'll never be to late to download other variants which you find cool on the site or downloading a DB that contains variants
