I swear I read somewhere that you can remove a riders potential from having too many races in a year. Is that true?

No, not true.
Racing doesn't influence potential nor training.
So ride as many races as you like

Oh right awesome! Thanks for the quick reply. I remembered where I saw it now though. In the pcm manual.
"Days raced: This shows the number of days that your rider has raced, so far, during the season. Keep a close eye on this value. A rider who takes part in too many races will see his maximum race fi tness drop away. Worse still, young riders, who have too long a season, may actually burn out and lose forever the potential that they once showed."

If you race over 60 days then the riders max fitness drops 1pt every 2 days
but as ian said it has no impact on potential
