Click on the waypoint you want to change, then you the right panel (notice it must be in the first option in this panel, the green one which looks like a puzzle), then for narrow roads, change 'Voies' (1 is narrow, 2 is default/normal, 3 wider, 4 is the widest). Then for cobbles change the texture (default is Road_03_A). Cobbles are roads 06 and 07, 08 is for gravel roads.

Observations: if 'spline' is checked, the modifications will apply to the whole road; if it isn't checked, they'll be applied only for that road point.
And another thing; some people try to use as few narrow roads as possible, especially in climbs, because they can mess up the gameplay because of the solid rider model. I don't use narrow roads at all. Unless you want to use it in the last climb of a queen stage of a tour, for example, when a small group is expected in the lead of the climb, or in the last sections of Roubaix, in these cases it won't give much problems, and in fact narrow roads make it easier to create climbs, since they're smaller thus you can create more turns without getting a road overlap.
