Looking in the manual for a command removing all controls and such for making screenshots (didn't find it), I noticed there's quite a few shortcuts missing. So here's my list. Please contribute.
[S] - Fetch Bottles
[D] - Take Relay
[F] - Infinite Relay
[G] - Hold Position
[H] - Free Effort
[E] - Attack
[R] - Counter Attack
[T] - Sprint
[Y] - Take other riders wheel in sprint
[Mouse Scroll When Cursor Above Effort Bar] - Raise or lower Effort
[P] - Pause
[CTRL + 1 to 9] - Create a group of riders
[1 to 9] - Select a group of rider
[1 to 9 Num Pad] - Select rider by name (sorted alphabetically)
[0 Num Pad] - Select all your riders
[Mouse wheel or Arrows right - left] - Moving through the pack
[Arrows up - down] - Move from rider to rider within your team
[Page up - down] - Move from group to group
[CTRL + Page up - down] - See the different groups from the current position (only from the main camera)
[CTRL + Scroll up - down] - See different riders from current position
F2 - Show/hide race profile
F3 - Show/hide characteristics of selected rider
F5 - Main camera
F6 - Move from camera to camera
F7 - Activate helicopter camera
F8 - Freeze camera and angle of view
F9 - Move from one motorcycle camera to the next
F10 - Jump between intermediate sprint cameras
[Space] - Race Info Screen
[Backspace] - Sort Riders

I guess it's the same. At least I've read someone saying that the + and - still work to fast/slow the game speed (actually, the + and - hotkeys aren't mentioned in the list )
