Just tried it and it worked.. Do they have no way of tracking me now that I am doing this, or will it somehow still appear somewhere in the network history? I am not very advanced with this stuff.

The system admin will have access to the full history of sites visited with the wi-fi connection of your workplace, so in short the hide.me proxied links will appear in your history.
