Personally, the best race I played was the Vuelta a Espana 2016 in PCM 14 (2015 DB expansion pack) with Movistar. Roman Kreuziger went in as the leader for us but was not able to challenge. This meant Beanat Intxausti had to take over the leadership duties. He was almost 3 minutes down on Richie Porte going into stage 16. After a couple of mountain stages, he had brought that lead down to 45 seconds going into the penultimate stage. He took more than a minute off Porte in that stage. But then came the 34 km ITT on the last stage. Benat lead by 24 seconds. He lost 34 seconds to Porte and lost the Vuelta by all of 10 seconds!
Another memorable race for me was winning the Grand Prix Cycliste de Quebec with a trainee rider in 2017 in the same Movistar season. Attacking about 5 km before the finish, Eustaquio Sanchez - thats's his name - held off the charge of the favourites in the peloton to claim a famous win! He had been with the team all of six weeks at that point!!
That's probably better than the best one can hope for from a scouted rider...
The toughest stage I've played was probably Stage 5 in the 2016 TDF in PCM 14 with the 2015 expansion pack. The stage was lined with 6 cobbled sections and created massive splits in the pack. The likes of Nibali, Froome, Kreuziger and Landa all faltered. Among the favourites, only Contador, Nairo Quintana and Uran managed to finish in the lead group. Kreuziger lost as much as 14 minutes riding for Movistar. Froome lost 11. I was happy to have gotten Nairo through this stage unscathed and still in a position to challenge for the GC.

Could you not put all these into the same post with spoilers for the big blocks of text? Especially if it is just you posting in the thread
The idea wasn't for only me to post on this thread . Kind of wanted it to be a rolling thread with people posting as and when they remembered stuff about racing in PCM...
