What's the difference between the difficulty levels available? Does normal difficulty mean no bonus or reduction to the AI stats?

Easy = lower stats for the AI(96% of original I believe)
Normal = no stat changes for anyone
Hard = small stat boost for AI(102,5% iirc)
Extreme = bigger stat boost for AI(105% iirc)

Those changes are obviously invisible in game, though, it's not like you'll see Froome with 88MO Pfft

I don't think you can tell what is the most realistic level, mainly because it's up to your pcm skills. If you are a bad player you'll never get on with extreme and viceversa.

I've been playing on hard with pro cyclist mode and getting results against riders with the same stats, though not always and its frustrating so i think normal might be the best and most realistic for me.
