Generally, it's Mercks no questions asked. But to me personally, it's Coppi.

@Udoi
You should've done this by decade or stage races and classics etc, because nearly everybody will say Merckx, |

Merckx is the biggest champion and the best cyclist is a discussion between Coppi and Merckx, not much room for discussion.

I've never seen Eddy Merckx. Lance Armstrong is the biggest I've seen. |

Who voted for Zoetemelk
Yes, Merckx. No discussion.
Hinault takes 2nd, Coppi 3rd (for me) |

Luigi and his hipster votes, you know.
Anyway, for me it is Pauline Ferrand-Prevot, followed by Merckx.

True indeed, but Ferrand-Prevot is also incredible, with now titles in MTB, CX and road cycling.
But it also should not be a debate in men's section, we only had one Cannibal.

No we had two, Poulidor was called a cannibal once in L'Equipe but the name didn't stick.

Maybe because he was eating the flesh that was dropping from lightning fast Anquetil and Merckx who were ahead of him all the time?
