Hotels in Copenhagen seem dear to me, I'm looking to go away in the first 2 weeks of September as it is cheaper then, just before I go to University. Been looking at Geneva too.

Ste, Im going to Paris for the final TDF stage - and opted for the Eurostar. Much easier and direct to get there, even with a 2 hour train in Britain first just to get to London. I did buy the Eurostar and National Rail tickets as soon as I could though, so by now it may be more cost-effective to go by plane.
If you do decide to go for that, don't forget to book a hotel for Sunday night since the stage is a much later finish this year.

I can't make it now, I'm unable to get the Monday off work, which is a real shame, really wanted to go, damm work couldn't arrange the 3 week shutdown after the TDF , will have to wait until 2014 and Leeds now
Paris is great for the week, it also depends what kind of person you are and what are you looking for. I spent three days just walking around places connected to French Revolution, which is studied a lot in my life. Next three days medieval sights /museums and one day just for relaxing and food tourism.
And as somebody wrote that public transport is not great, i did not have a single problem with it (except the dirty cabins in metro). I bought a week long pass (also bough pass for museums) and it was fine.
Of course Paris is very noisy and busy with tourists, but that is expected...
From central and east European cities, i would recommend Vienna, Prague or Budapest.

Copenhagen is set in my mind, I have found it cheaper to go in the 2nd week of September with costs including flights and hotel at £416 for 4 nights, hotel is the Absalon close to Tivoli Gardens.
Few questions before I make my final decision, how are the bars there and what is Copenhagen like for sightseeing/ museums/ history. Also how would be best to get from the airport to the hotel. Finally will it be possible to survive in Copenhagen taking roughly £250 spends for 4 nights?

Copenhagen is full of great bars. That really should be the least of your worries.
Same goes for transport. There's a metro going straight to inner city in less than 20 minutes. However, since you're going to live near the Central Station, you might as well take the 'normal' train . Both are accessible from the terminal where you arrive.
If you're planning on going to the non-free attractions, you may want to look into buying a Copenhagen Card which gives you free admission to 75 attractions, free public transport and some discounts: https://www.copenhagencard.com/?ld=0
If you have an idea of what you want to visit, you can use the calculator on the bottom of the site to see whether a Copenhagen Card will save you any money.
As you probably know, Copenhagen and Denmark in general is expensive. It's definitely possible to get through four days for 250 £, but you won't be eating and living like a king for that kind of money.
I don't know why but this thread was on the main page so I can drop a little hint of Porto in Portugal, I don't live in the city but in the outskirts and I can absolutely recomend it, very beautiful city both during the day and night.
If you like history you have tons to see, if you like pretty buildings the historic center is super scenic, the valleys/bridges/river combo you have is a mesmerizing one even for me who's lived here all my life, you have beaches closeby, mountains are close if you opt to have a car rent, think the night scene is also nice, and being in Portugal I reckon the prices must be really reasonable for any working European
Besides combining train/Flixbus you can have super cheap travel into other cities like Lisbon, Coimbra, Aveiro, anyhow there's a lot of options for a lot of different tastes.
Unfortunately my experience on the tourist side so far is still very empty.. However I can absolutely reccomend it!
Additionally I also have the same interest, I'm not much of a city person, was taught Lisbon and Paris are the best in Europe but tbh I don't have much interest in neither. I value city architecture, surounding views/mountains a lot more, do you guys have some recomendations around Europe of some nice places? (can be obvious, can be relatively unknown, all is welcome )

In terms of cities Top5, I'd go Helsinki, Antwerp, Tallin, Prague, Sevilla in no particular order. If you're more a hiking/landscape guy, I highly recommend Saaremaa, coastal northern Norway, Elbsandsteingebirge or Sardegna. Also really liked Madeira, but does that really count as Europe in your sense?
