Can anyone tell me what stats matter the most when it come to workhorses. When i put a high stam guy up he just seems to die out just as i need him

Depends on the stage profile and whether its a stage race or a classic. If its a flat race you'll workhorses with high flat values, hilly stages need workhorses with high hill values and so on. And of course Stam is required, not so much for resistance, and recovery depends on whether your doing a stage race or not. It also depends on what your chase tactics are.
