I'm new to the game and I have some questions:
1) While simulating a race, If you tick your rider (who has a free status) to breakaway, will other riders from his team (which are team mates for a leader) chase him if they are ticked to chase breakaway riders? What abilities should chasers have?
2) What's use of riding with breakaways but without taking part in them? How can it help your team leader? What kind of riders should do this work?
3) What's use of the lead-out man? Does it work only when your team leader is ticked to breakaway? What abilities should lead-out men have?
4) What will your team leader's team mates do if they are ticked to defend leader's jersey? What abilities should defenders have?
5) How will "take risks" effect your rider's behaviour?

I'm not very certain, but i'll try to answer your questions though.
1) Unknown if they actually chase the rider that breaks away if it's yours. Assuming there are more breakaways in one race, i think sometimes they might chase yours, sometimes they might chase others.
2) It helps your team take controll of the race. Your rider will jump in the breakaway, but won't participate in leading the breakaway group, meaning he spares energy and doesn't help the time gap expand.
This means your team may not ride in front of the peloton to catch the breakaway, assuming your breakaway rider has a fair chance of winning the race, unless other teams will lead the peloton to catch the breakaway.

4) I think they're defending the jersey by leading the peloton, not giving breakaways (with dangerous riders in it) too much space. I also believe they ride slightly better, being motivated having the leading rider in their team.
5) I think they'll jump in breakaways more easily than usually.
best is to just not simulate becuase it doesnt work and gives unrealistic results. if you dont care about a stage just put it on x8 and keep bringing water up
The simulation part of the game is too much of a black box. I'd also like to simulate some races where I'm not that interested in the results. However, i find it hard to understand the options, or better yet the lack of them when simulating a race.
If assuming the engine works similar when simulating and racing in 3D, i'd answer your questions like this:
1a ) Don't know
b) Chasers should have stats according to the stage in question. The'll be leading the pack so if it's a flat stage, they should have high flat. That way the'll be able to ride fast and gain time. I believe that they'll benefit from a high fighter stat regardless of stage type, but that's just speculation.
2a) If some riders don't work in a breakaway there's an increased chance that other riders will attack from within the break, causing the break to be smaller and therefore easier to catch.
b) Don't know if it matters all that much.
3) I think that this is related to the sprint. A good lead out should have high flat and some sprint (possibly fighter) assuming that it's a flat stage.

6) I think they'll stay in the peloton. If you choose to attack in 3D the team mates do not follow the leader, they simply stay in the pack.
