I use the AI planner in career mode (Trek team) but now i am starting with Paris - Nice and most of my riders will have 22 to 36 race days after that.
Nibaldi for instance will compeed in Tireno and Volta Cataluna. After that he will have 32 riding days. Giro and Vuelta are still to come.
Isn't that way too much and do I need top pick my own races and plan my team accordingly?
Thing is my riders need to ride competitive to get the form peak. How many days in competion are needed to get to the form peak?

I used to throw out many of the early races and would still get all my riders above 60 race days across the whole season, but many complained throughout the year that they weren't riding enough. So keep all the planned races and make sure everybody gets a decent number of race days early - so do change the line-ups a bit.
As long as you watch out for tiredness and give you riders break weeks when needed they can pretty much race as much as they like. In Pro Cyclist Mode, when you only have to plan one rider, you can easily get 120 race days in, all with good fitness. So Nibali should be fine, though you should look at his planner.
I don't know fully how the fitness peaks work and they don't always fire when they should. But 100% fitness without a peak isn't so bad. The more seasons you play the better you'll be able to judge when to change something.
