Hello!

Just realized there is a lot of championship missing in the career mode.. Cant find for example the norwegian championship, or the swedish championship

That's because they're not there. There's a randomly generated winner. You can add them yourself using the Fast Editor or wait for the Expansion Pack, which should definitely have them added.
