I had just bought the TDF 15 game to PS3, and for me it is a bit of disappointment (no numbers on the back etc. )
There is a lot of opportunities in this game (Challenge mode, Pro Tour...), who disappears my disappointment, but there is also a new level-settings like in PCM. I had completed the Beginner, where I was Kwiatkowski, who won without any troubles (5 minutes to Froome). There is also a update-DB with the full TDF 15-squads (finally I will not pay for it!) and updates in some riders like Contador.
Generally I think that it is a good game

Yeah, it is a good game, but first of all... Don't play on beginner, it such a nonsense. Winning Tour with Kwiatek 5 minutes ahead of Froome is good example. The only time I have played this game on beginner was first stage to see the difference between professional and beginner. Well, with Cancellara I have won first stage with 35 seconds ahead of second Jungels. It say again everything. If you will play on professional with Kwiatek on Updated DB you can easily finish in second 10th. But it gives imo more fun. Well, to be fair almost every rider with 75/75+ is good option to play.
Professional is imo the best option, you didn't win every Tour with rider 75/75+, but it gives a lot of fun.
Pro Tour Mode... It is okay but when you already win TdF and have possibility to buy legends you can only accumulate money. Nothing more.
Right now I have finished about 80 TdF. 67 is official number with my Fantasy TdF . Won it once, in Pro Mode with Nibali and last year route, before patch. Twice finishing on the podium. All lvl professional.
Challenge Mode is nice. On almost every road have gold medal (without 3, have silver).
Ah also I need to do something. Playing first 9 stages with Cancellara with updated DB. Before, after first week I was first with 7 minutes to 2nd place. With lvl beginner it could be about 11 or more .

1) I will "try" to not play the beginner, because it is easier than I excepted to be. When I tried the prologue, there was 30 seconds difference between the level beginner and advanced
2) I have never tried professional, so let's see how I make it
3) Tested that today (beginner level ), and I have won all my stages except two
