Be a Pro - rider types // Tips for realism

TL;DR : questions/ideas/musing about making the Be A Pro mode more realistic / enjoying other stories than "I'm a GT contender I win everything by age 22"

I am wondering if every rider type would be *really* playable/enjoyable in be a pro mode
I tested a GT rider (began in previous patch, though) and I can put my climbing and TT skills to good use.
Would a sprinter be somehow a realistic career = would the team protect, organize a lead train ? Or would we be limited to a "catch the good wheel" Sagan-like strategy ? That would kinda break the immersion for me.

Likewise, I fear baroudeur/cobble/TT specialists would be too limited by their stats, the availability of their race type, and the fact that IA is biased against player breakaways

Have any of you tried these for extended time ? What's your feeling about it ?
Note that I'm not saying it's unplayable, I'm sure a skilled player can manage anything. I'm regarding whether I could "roleplay" these rider types without being too much disturbed by the game (with a GT rider, I sometimes pester the IA teammates, but they protect me, run against breaks, lead the rhythm if I'm a favourite ... Not too bad, and believable)

Considering (with previous patch) I found my GT rider quite easy, and still thinking about immersion/realism I'm starting to search for ideas to help ourselves (or is it only me?) keep said realism as high as possible : make the whole experience more difficult/realistic, other than just tweaking numbers and upping the difficulty setting.

- force oneself to respect the strategy made by the IA head of team => act as a domestique and exhaust yourself to protect your leader even if you could've climbed better than him using dot
- don't play/contest sprints when a RL rider wouldn't : I discovered I could actually end up in top 20 anytime with my GT contender if I want too. Not even speaking about doing a 1km rush with 99 cursor, which could be realistic once in a while, considering the TT-skills, and how it happens in RL.
- consider day form and roleplay on it => do not use every micromanagement/dot/... trick to play one's best, every time
- force oneself to use attack/follow more and less of the dot, to avoid the energy optimization too much (well, Froome is another story ...)
- train in other areas (double edged : can make your rider versatile and able to compete on every terrain, but slows down his progression)

If any of you have ideas about that, or are already using such tricks, thank you for your input. And sorry about the length of the post ...

Seeing as I am currently doing a video series on the barodeur (that's fighter, right) type, I would say that it is perfectly viable to play as. Sometimes you'd be better off doing what your team says you should, but it is also possible to attack more frequently than a French rider on Bastille day.
