This time I bought the game via steam and as always made two copies of the original game files in order to change between the databases that will come out in the near future and to have one "pure" backup of the game files so I don't have to use up my activation keys and avoid new installations of the game everytime I mess something up.
Steam is even nastier and more time consuming in this regard because it requires you to download the whole 10gb again when reinstalling the game.
Right now I noticed I can't uninstall the game the "normal way", that consisted of using the above mentioned unins000.exe file and clearing the stages and shirts etc. after after that task because this exe and its constituents are missing from the game folder.
Does unins000 still exist and where do I find it?
If not, what should I do to easily and manually switch and uninstal the databases?
Has someone found a way to handle more than one database successfully with steam?

Playing with different databases should work as always. For each database you have to make a copy of the game folder and install the database into.
1. Install the game
2. Install the patch (should be automatic with steam but make sure it did run)
3. Make a copy of the game folder as a clean backup
4. Install the database into the original folder
If you want to add another database
5. Rename the original folder (f.e. database 1)
6. Make a copy of the clean backup folder (see step 3 above)
7. Rename the copy to the original folder name
8. Install the database into the "new" original folder
Repeat steps 5 to 8 for every new database
No uninstalling is needed as far as I can tell. If you don't like a database, just delete the whole folder.
In Steam you don't have to uninstall the game. You can right click the game and then select "Lokale Daten löschen" or whatever it is called.
I usually do all your mentioned steps in the same order but I am curious why there isn't an exe file for the uninatallation of the game in the game folder anymore.
To manually delete corrupt or outdated folders may leave remnants in the registry, 10GB is pretty much. So the method with the the unins000 exe was more elegant, I think.
Another question more DB-related:
If a new patch comes out, will it be safe enough to overwrite the copied game folders with the new patch files and copy the specific DB-files afterwards a second time in there or is it better to delete the whole folder and start anew with a new game folder copied from the orginial steam folder?
This will hugely depend on the changelog of the patch of course.

I did not say you have to manually delete the installation. I told you to do it from within Steam. You install it with steam, you uninstall it with steam.
It is always the same procedure with a new patch.
1. Uninstall the game
2. Install the game
3. Install the patch
4. Install the DB
If you have a clean backup you can skip steps 1+2
