As the title says, is there any way to edit which riders are race favourites?
For example I'm fed up of racing The Tour of the Basque Country and not having Contador amongst the race favourites as his hill stat is not high enough or races like the Gent-Wevelgem that treat the race as a cobbled classic instead of a sprinters classic, as a rider like Greipel who should be a favourite ends up riding like a domestique. Even the Milan San-Remo doesn't put the sprinters amongst the main favourites either.

By my knowledge there is no way to change that. I agree these are annoying bugs, though. Cavendish relaying in Kuurne - Bruxelles - Kuurne can be frustrating indeed...

Yes I've had that with Kuurne as well with Cave relaying at the front!!!! For that reason I don't select him on the startlist for the race.

You can't do anything about it with changing race favourites. If you want to solve the problem, try raising the COB stats of these guys for that one race (or generally). That's just PCM.
Consider that this is a game which does not simulate real life professional cycling.
I recommend using one of the "funny" DBs which has fake or funny names for people who fail/struggle to understand the above.
