The options represent roughly one or two months.
The season start is January and February, spring classics are March and April (also including one-week stage races from that period), Giro is May (also including build-up), Tour prep is June, Tour is July, Vuelta is August and September (also including build-up) and autumn classics are October.
It's one of the worst parts. You have to re(assign) the rider objectives. Why aren't they kept from one season to another ? I have to rearrange all the objectives, re(make) the calendar. I like the career / planning part, but I don't like to repeat the same actions every seasons. At least give me something new to think about, not just to repeat the same actions ! Luckily I have the PCM.daily Expansion Pack and some stage races (and WC) change their skin, so I have to think a little. But it is too little comparative with the repetitive and annoying tasks.
Season start (Jan & Feb)
Nice, but not so attractive. Only one WT stage race. Plus, in January, and even February, the riders have a bad form, etc.
Spring classics (Mar & Apr)
The best period so far. In March and April you have 5 tours (and thanks to PCM.daily Expansion Pack they are different from one season to another, so you have every season something new), the Cobbles and Ardennes Classics (a lot of fun and adrenaline). I would only suggest in the next years some new variants for the one-day race too, because after 4 seasons of trying to attack in exactly the same spot ...
But this is the period the most attractive.
Giro d'Italia (May)
Nice, but not the best GT.
Tour prep & NCs (June)
Criterium and Tour de Suisse are attractive, but waiting for all the NC and NCT to simulate, or worse than that, participate with riders in bad shape, is just annoying.
Tour de France (July)
The second must enjoyable period. In Tour de France all the big names are there, you have to fight for a good place. And the variants from the Expansion Pack are very, very good. And like a bonus, right after the Tour you have San Sebastian (usually, the majority of climbers and punchers from the Tour are on San Sebastian too) and Tour de Pologne. July it's like a party.
Vuelta a Espana (Aug & Sep)
This period is nice because you have a little for everyone. The stage races riders are on Spain, the sprinters are on Vattenfalls and Plouay, the punchers on Plouay (if you don't simulate) and Canadian classics, the cobbles riders on Eneco. Basically it's the second period when you can use all your team in a short time. The only problem is that for all the races from above the level of the participants is relatively low.
WC & autumn classics (Oct)
For me, despite the WC and Lombardia, I am just waiting to finish the season, after Vuelta. WC and Lombardia are enjoyable, but that's all.
Interesting poll
I quite enjoy the planning actually, especially if my plans work out during the season.
For some reason my favorite race on PCM is Tour of Oman. I always enjoy playing that and it's always a fun test early in the season
Well, I have to say, I have two favorite parts of the season... I dont really like one day races, but once they are over, I like the time from Tour of Turkey, Colombian NC, Trentino, Giro (my favorite race ever), California, Romandie, Suisse and Dauphine, its like second half of april, may and first half of june... there are some other small races in those days that keep my team busy and as PC or Conti I can get a lot of points...
The other part is just in the second half of the TDF, when Österreich-Rundfahrt takes place, and there are a lot of races like Polonia, Burgos, Portugal, Utah, Colorado and Finally la Vuelta which is not my favorite... but when all of this races, are hilly or high mountain I enjoy PCM because Im fighting in mountains all around the world...
I use FCD-France and they have some variants that makes interesting the years...

Planning is my favorite part. Wish I could figure out a way to play in career mode, view the races in 3D but not manage my team in the race. Kind of like the man game solo.

Big thanks to jdog for making this AMAZING userbar!
-The period from 16 October-1 February is a great part of the season. I gotta say finding new sponsors is good fun, I have a custom team which has low budget and wages and at the end of the season IgotIGN as a sponsor and the wage limit and budget with them is massive compared to the custom sponsor I had. I like the period in the lead up to the Tour with Tour Suisse and Criterium, I like the Giro cause it is quite an interesting race to compete in. The Vuelta is also a good chance of a podium or top 5 due to there only being a few strong riders who didnt race the Tour.
So I am going for Giro and the build up.
