The fist one is if you have made a custom tour with more stages. Then you can choose it under every stage in the custom tour editor.
If it is for only one stage you just have placed into the pcm folder
You do it in the end of your profile in the xml file.
Flat stages: <sprint type="finish_flatstage" />
hilly stage: <sprint type="finish_hillstage" />
mountainstage: <sprint type="finish_mountain_x" />
x is the categorie of the mountain
If you have made a stage where they finish flat, but there are many hills then write: <sprint type="finish_classic" />
it is a good ideer even if you edit a stage in the custom tour editor to place these lines above in the end of your profile xml

without having changed anything, it already says "finish_flatstage", yet in-game it appears as hilly...
If it is one stage without use of the custom tour editor, the line in profile chould affect the profiletype, but if your stage is in the custom tour editor, your choise will have first priority than the line in the profile of your xml file. if it says finish_flatstage in your line, and it says hilly in tour editor, it will be hilly.

the one I tried it on was the Clasica de AlmerÃa that comes with the PPDB 2006.
