What is the real impact of the fitness ? Does this modify the skill ? How ? If affects all the stats equally ?
What is the difference between a fitness form of 1, one of 2 and one of 3 ? I had too many objectives for a rider, so I have to choose if I put him two primary objectives (fitness form 1) and two secondary objectives (fitness form 2), but he will have a fitness form of 3 for the last race. Or I put all the races as secondary objectives (so a fitness form of 2 for all), but I don’t want to risk losing the races (in case the differences between a fitness form of 1 and a fitness form of 2 are important).

Well, you should just adjust the bars to your likings(clicking on them).
I think it affects stats.
Actually, there's still a 1-99 form system, but it's now just displayed as 1-6 form(but with 1 being best instead).
At the 1-99 system, I'd say that +5 form is +1 stat. So here it's like 1 number is 2/3 stats I guess(since 6 form displayed still isn't form 1(/99), but around 50 I think)
So, if I got the maths right, a difference of 1 in fitness value is like a difference of 2 in stats (every stat ?! ).
If a rider has 80 MON / 80 HIL / 80 TT, the fitness form 1 will make him use those values, the fitness form 2 will make him use 78 MON / 78 HIL / 78 TT, a fitness 3 form will make him use 76 MON / 76 HIL / 76TT and so on. So, for fitness 6 will be 70 MON / 70 HIL / 78 TT.
Did I get the things right ?
Well, I'm not sure about the exact number, as I said, but I think that's how it works(except that at fitness 6 you should have 70TT, but that's a typo I guess).
It might be in % of the stat as well, but I think this is the general idea

O, well, if that is true, I am in trouble. My main climber cannot achieve all his goals. He's 76 MON, so the fitness 3 will downgrade him to 72-73.
Well, don't forget that your rivals aren't always in top-form either
Fitness level 2 is enough to overachieve without being a good PCM player, in my experiences. Level 3 is tougher, but it depends on form of others and difficulty of the goal, ofc
