I Just simulated a stage in the Eneco Tour where the breakaway won with 56 minutes and the entire peloton withdraw. So how do I overwrite the savegame with the weekly save?

Take your weekly save and save over your career file. You MUST use the name of your Career file.

Take the lastest file from the weeklysave folder and copy it into the save game folder. You don't need to use the same name, you can load the save from the loading screen in the game.
The save is here: My documents\pcm12\users\your name\database\solo\name of db\
