Punchers are good on short steep climbs/hills. I.e. breaking away and snatching a win, Good flat/downhill/acc might help his effectiveness.

Northern Classics specialists typically have a good cobble stat, but other skills are also valuable in a cooble-race, like hill and stamina. Doesn't hurt to have a good flat rating to break away towards the end, or good sprinting if he approaches the finish in a group

Fighters are good on flat. I personally use them mostly as team mates to chase in break aways or to lead a sprint train.

The other are fairly self explanatory, but I would say it's often better to have a well rounded rider than arider who is only good in one skill.
