I'd like to train my riders skills.
I want the skills with greater growing changes to grow, but what training should I choose for each skill?

As you can see, each specialisation has its primary stats, secondary stats and tertiary stats.

E.g.: A puncher obviously needs a good hill stat, acceleration is needed for attacking on hills and endurance is important because hilly classics are often more than 200km long. Flat is welcome because there's always flat between hills, mountain is needed for steeper climbs and resistance is needed to keep a steady pace. Sprint is not necessary, but can help in races that don't end uphill.
To know which stat to train, you have to check your rider's current stats, his potential (yellow stars) and his age.

E.g.: We have two sprinters with the same stats and potential (stars): Hill 68*****, Sp 74*. The only difference between both is their age: rider A is 35, rider B is 25. Since rider A's career is coming to an end, it would be useless to train his hill stat, while rider B still has some years to go and thus can become a decent puncher.
To know which training focus to choose, you just check the table you have (which is still the same).

Rider A from the above example should be trained in sprinting. Rider B should be trained as a puncher. If you need to train someone's cobbles stat, choose northern classics. A future GC contender with decent mountain and time trial stats, but low recovery should be trained in stage races. A future GC contender with good mountain and recovery stats, but low time trialing should be trained in time trials. A future GC contender with good time trial and recovery stats, but low mountain stat should be trained as a climber. Etc.
It is always possible to open local.cdb and have a look in STA_training_excersise to see the exact values.
The numbers in that list are bonus values, so a a zero does not mean that the stat will not be trained. Zero means that the stat will develop normally.
