You need to edit the stages of the TdF.
It should be possible to do it with the editor which comes with the game, just don't overwrite the original DB.
Use the stage viewer to find the attributes of the stages.

See, that's what i can't find out how to do. I am really not good at these things.

I'll assume you know how to use an editor, otherwise it's going to be a long story. Go into the STA_race table and find the raceID of the Tour. (it's 25) Next go into STA_stage and scroll down untill you find the stages from the Tour. (if you sort on raceID they are all next to each other) Now fill in the name of the stage, the stage file name (normal tdf is top_tdf_01 to _21)
Next you have to use the stage editor to open the stage data of every stage you want to use. With this you can find the distance, and the relief (1= flat, 2=hill and 4= mountain) Under type fill in 1 for normal stage, 2 for tt and 3 for ttt. Last three columns you need are the time gap, (which you can set between 7 and 20 anyway you like, but if you don't know just follow stage data) uphill sprint and mountain.
