Okay, I read that other thread about detailed simulation. I am still wondering how it said in the mannuel that "you can also interact with your riders by changing your tactics in real time in order to react to the race".

Where do you find this? I can't find anything on Detailed Sim in my manual, so i've tried to figure it out on my own really. Here's how I see it:
Catch up on leaders (yellow): Your team-mates will chase down any breakaway that has a "leader" (ie. an apparent GC threat) in the part of the race you set this to.
Catch up on pace (orange): Your team-mates will chase any breakaway in the part of the race you set this to.
The red one (can't remember the name): Your team-mates will severely increase the pace of the peloton, and try to blow it up in the part of the race you set this to.
Team-mates will either go in breakaways or follow the above orders
Free Elements will try breakaways about half way through the stages or follow for as long as possible
Sprinters will try to follow for as long as possible, and then sprint (like everyone else) at the end of the stage
Leaders will try to follow for as long as possible, and can be set to attack at a specific point in the race. They seem less likely to attack if a team-mate is in front of them, which can be a problem. Also, they don't respond to other favourites attacks, and seemingly relies on their team-mates to reel in the favourites
I haven't seen anything to suggest you can make spontaneous (spelling?) changes to your tactics while the race is on

In the mannual if you look at Section 11 Getting to a race (pg. 36), right under the section 11 heading it talks a little about Simulation and Detailed Simulation. At the end of the Detailed Simulation part it says "In this mode you can also interact with your riders by changing your tactics in real
time in order to react to the race".
