What do they mean?

Does a 75 stat with 3 stars mean that he will end up with a 78 in that stat?

Does it vary from stat to stat? - as in a 6* potential in TT is better than a 6* potential in mountain

How can I tell that my rider is going to be better in cobbles (67 and 5*) or sprint (72 and 3*)?

I would say a star equals roughly 2 stats but it may be up to 3 stats, I had a rider 78 and 3 stars who had potential to be 85

As a quick formula, I would say its
1 star = 2 points
but thats just an estimation, you can look up the potential in an editor.
There's no difference between the stats, so 6* TT means the same as 6* SP, although one potential can be a little bit higher.

Yeah, I usually count 1 star as 2 points in that particular stat. But the only way to know for sure is looking at the potential with an editor.

1 star = 2 points, but young riders also get experience over time, which makes them increase some more.

E.G. Youngster with 65 sprint and 6 stars gets a minimum of +12 to sprint, but usually more.
