I've always wondered how cyclists stay so slight, I'm 5'11 and 70kg which is about the average weight of pro cyclist,I'm still growing (outwards and upwards) and will never be able to maintain that weight for long...surely some of these 55kg feckers are on anti-growth pills!

I dunno, am about 6'4 and 75 kg and I eat plenty so I don't think it would be tough to get down to 70, and if i worked on it i could probably get to 65 but that would involvr loosing muscle mass so clearly cyclists can't do that. however sastre is 60kg which is about the lightest and he is 5'8. I don't really have a conclusion except to say it's more about build than height and that riders like Hincapie and Cancellara are 80kg or so.

Nah sastre aint the lightest by far:Txurruka is 56kg and Zaugg is 55kg...looking at some stats it tends to vary from team to team.
Euskatel and ag2r have only one or two riders over 70.While classics teams like Quick-step have very few riders under 70.

It's a combination of metabolism, how much energy you spare and how much energy you get (through food, etc.).
The second and last parameters can be mastered by sportsmen, the first one can be mastered through science (drugs/medicine), but it's mostly a matter of habits and genetics (some people will be obese even though they won't eat that much, some will remain thin even though they eat a friggin' lot).
Then being light or heavy : on flat races it's more a matter of pure power and aerodynamics (the bigger you are the more your body hangs on the air you ride through, but a better position can improve it significantly), so it doesn't matter much to be heavy on the flat.
In mountains it's better to be light, as the weight/power ratio is the relevant one.
If you're heavy you can store more energy, and you'll spare more of it. I reckon it's a bigger job to recover fully if there's some food problem or metabolism problem (the bigger the quantity, the most likely you'll get a problem, that's statistics), I'm a bit doubtful about this point though.

well the bigger you are and the more muscled you get you gain tha ability of spending a greater amount of energy during a certain period of time. but as you spend more energy you'll consume greater quantities of the glycid and lipidic reserves that you create when your not in muscular activity. After wasting your body reserves you'll have to restore them and your body only does that when your blood glicemic values are good. Then your liver and muscles start to produce those glicemic and lipidic reserves (also known by 'fat' that will be available for your muscles to use when necessary.
obviously this is not linear for everyone as you meant it. some will produce more them needed and some will do the opposite. that has to do the way your liver and muscle tissues work which may vary in the population and is defined by your genetic info.
