Hello.. How can i edit riders stats and teams, if i have the PCM15 over steam?

I have now created a race under the post STA_race, but it havent a date in the carrere.. where can i choose date for the race??

You need to also create an entry for each stage in STA_stage. There you can specify the date of the race.
