Trying and searching I have found where to set snow height in stages.
First of all I have to say that if I'm not wrong, this set is common to all the stages ingame: You can not have different snow height for different stages.
Well, in "C:\Program Files (x86)\Cyanide\Pro Cycling Manager - La Vuelta - Temporada 2010\3D\Landscapes\Ground" you will find an archive called "Lnd_SnowXX_AlpesX_00_D.dds". It's the only texture I know about snow. It refers to Alpes, so I think that when you select a different city kit snow does not appear (I supose that...not checked).
At the same route I tell above, there is an archive called "GroundAlps.xml". If you open it with notepad you will find in it this lines:
I have set all the heights in 3200 and it works perfectly. Now, my stages don't have snow at 2200 meters, which is completely unlikely in races during the summer...
Obviously, you could set this snow height to the values you prefer.
Perhaps this information is known by most people here, but if this information helps someone of you I will be very satisfied of it.

Salutes to you all friends!!
so I can also set a lower height?
values to be changed are these?:
I don't like the snow because is not realistic in summer, but you could edit these values the way you prefer.
I don't know exactly the meaning of the values, but you could try and see what happen. I have set:
With this, I have only a little snow in higher slopes. You could set these three values (3200) to anyone slower and you will get snow in the most part of the stage.
Try it and open a stage in stage viewer or stage editor and you will see the difference...
