It's always best being in front when the peleton goes into a cobblestones section. This way you'll always be in the good part of a possible break in the peleton. When you want to ride away from the peleton, though, you just put your main rider (good COB required) on free effort at about 55-60. Normally, you should just ride away without any problems and without reducing the red and yellow bar too quickly.
